I recently bought tokyo Extreme racer 3 at Game stop and it was well worth the 13$. It has huge courses, alot of cars and a good sense of speed. These screen shots are a little rough but you get the Idea.

Nothing, you prob dont have the equipment to do it with.

Could have used S-Video (or RCA) Out of PS/2 -> Capture Card

Or used a PS/2 Emulator on PC

None of it matters, the method you used was quick and effective!
